Baked Zucchini Fries

Quick recipe for homemade baked zucchini fries (zucchini wedges). Crispy and crunchy on the outside and so juicy on the inside. The avocado fries are served with a homemade avocado ranch dip.

Ingredients


  • 2 medium zucchini, cut into small fries (wedges)


bowl 1-

  • 1/3 cup all-purpose flour


bowl 2-

  • 2 large eggs


bowl 3-

  • 3/4 cup panko crumbs
  • ⅓ Tbsp plain bread crumbs
  • 2/3 cup parmesan cheese
  • 2 Tbsp Italian seasoning
  • 2 tsp garlic powder
  • salt & pepper to taste


avocado dip-

  • 1/2 avocado, mashed
  • 2 tsp mayonnaise
  • 1½ Tbsp Ranch dressing
  • 1 garlic clove, minced
  • ½ tsp hot sauce
  • ground black pepper, to taste


Instructions


  1. Line a baking sheet with parchment paper. Preheat oven to 425°F.
  2. Cut the zucchini into thin even fries (wedges).
  3. Prepare bowl 1, bowl 2, and bowl 3.
  4. Working in batches, fully dredge the zucchini fries into the flour bowl, then egg bowl, and finishes by dredging into bread crumb bowl. Pressing the zucchini to fully coat them in the mixture.
  5. Place the coated zucchini fries onto the lined baking sheet.
  6. Baked at 425°F for about 20-25 minutes, until the zucchini fries are crispy and .............
