This Instant Pot Chicken is such an easy and delicious way to make shredded chicken for all sorts of different meals.  If you meal prep, you need this instant pot chicken recipe.  With only about five minutes of prep time and 30 minutes in the instant pot, this instant pot chicken breast recipe is perfect.

Ingredients

• 1/2 tablespoon extra virgin olive oil
• 1/2 teaspoon kosher salt
• 1/4 teaspoon black pepper
• 1 pound chicken breasts
• 3 cups water

Instructions

1. Rub the chicken breasts with olive oil.  Season with salt and pepper.
2. Place three cups of water in the bottom of the instant pot.
3. Add the steamer insert that came with your instant pot. Place the chicken breasts on top of it.
4. Close the instant pot and make sure that the pressure release valve is set to sealing.  Set the instant pot to manual (HIGH), and the timer to 12 minutes.
