Ingredients
- 1/4 cup olive oil
- 1 medium onion, chopped
- 1 large carrot, peeled and chopped
- 1 stalk of celery, chopped
- 4 garlic cloves, minced
- 1 pound shredded cooked turkey (I use a mixture of white and dark meat)
- 1 24 oz jar marinara sauce (I prefer Rao's brand)
- 1/2 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 1/2 teaspoons dried basil
- salt and pepper to taste
- 12 oz spaghetti noodles
- chopped fresh basil, for garnish
- grated parmesan cheese, for garnish
Instructions
- Heat the olive oil in a dutch oven or soup pot over medium-high heat. Add the onions, carrots, and celery, and cook until vegetables are tender, about 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Add the turkey meat and cook for another minute, mixing all the ingredients well.
