Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 2 carrots, peeled and finely chopped
- 2 serrano chili peppers, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 15.5-ounce cans black beans, drained and rinsed
- 1 15.5-ounce can pinto beans, drained and rinsed
- 1 28-ounce can diced tomatoes
- 3 cups vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Heat oil over medium heat in a large heavy-bottomed pot. Once the oil starts to sizzle, add onion, bell pepper, carrots, and serrano pepper. Sauté until soft (about 8-10 minutes).
- Add garlic and cook for 1 more minute.
- Add tomato paste, tomatoes, beans, and stir to coat.
- Add broth, chili powder, cumin, salt, and pepper.
- Bring to a boil then reduce heat and simmer for 30-60 minutes.
