Ingredients
- 1 tablespoon olive oil
- 4 lamb shanks
- salt and pepper
- 1 pound baby potatoes halved
- 1 cup Kalamata Olives
- 1 jar sundried tomatoes
- 1 cup chicken broth
- 3 Tablespoons lemon juice
Greek Spice Rub:
- 2 1/2 teaspoons McCormick dried oregano
- 1 tsp McCormick dried basil
- 1 tsp McCormick dried rosemary
- 1 teaspoon McCormick onion powder
Instructions
- Heat a large heavy skillet with the olive oil. Season the lamb shanks with salt and pepper. Brown the shanks on each side.
- Add the potatoes, olives, sun-dried tomatoes and salt and pepper. Add chicken broth and lemon juice to the bottom of your slow cooker. Add the lamb on top and rub the greek spice rub on the lamb shanks.
- Cook on low for 8 hours or until tender.
