Ingredients

  • 12 oz wt. fresh boneless skinless chicken breasts or cutlets
  • 4 oz wt. sliced deli ham
  • 1 cup frozen green peas (5 oz wt.)
  • 1 cup shredded swiss cheese (3 oz wt.)
  • 1 cup shredded cheddar cheese (3 oz wt.)
  • 1/4 cup finely grated parmesan cheese (1 oz wt.)
Creamy Mustard Sauce:
  • 1/2 cup heavy whipping cream (4 oz wt.)
  • 1/4 cup finely grated parmesan cheese (1 oz wt.)
  • 1 tbsp dijon mustard
  • 1/2 tsp black pepper
  • 1/4 tsp salt


Instructions


  1. Preheat the oven to 375 F. Prepare an 8x8 inch baking dish.
  2. Cut the chicken into 1/2-inch pieces, and cut the ham into 1/2-inch strips. Pat both dry with paper towels if wet. Distribute the ham in the baking dish.
  3. Cook the chicken pieces in a large pan over medium heat until cooked through. Use a slotted spoon to transfer only the chicken to the baking dish, leaving any liquid in the pan.
  4. In a small saucepan, add all mustard sauce ingredients. Stir together over medium heat. Once it starts to simmer, turn off the heat.
  5. Distribute swiss cheese, peas, and sauce in the baking dish. Use a spatula to scrape down the saucepan to get every last bit of the creamy goodness. Stir everything directly in the dish until well-mixed.
  6. Evenly top with cheddar cheese. Sprinkle parmesan cheese on top.
  7. Bake at 375 F until heated through and starting to brown on top, about 30 minutes. Let it cool for at least 10 minutes before cutting into it.
